This is one of my favorite ways to eat carrots. The sweet flavor of young carrots is such a nice contrast to the zest of the cayenne that it makes a really delicious side dish. Try this on a chilly fall day with carrots picked right from the garden where they will keep under a layer of mulch even through light frost.
Ingredients for Creamy Cayenne Carrots
- 10 Cups chopped carrots
- 1 Cup milk
- 1/4 Cup unsalted butter
- 1tsp salt
- 1/8-1/4 tsp cayenne pepper (to taste)
Directions for Making Creamy Cayenne Carrots
- 1) Place carrots in a steamer and cook until soft.
- 2) In a small saucepan, heat the remaining ingredients.
- 3) Pour sauce over carrots and mash until they creamy with a smooth consistency.
Prep time 20 minutes. Serves 6.
Carrots are high in beta-carotene which is used by the body to produce Vitamin A. And of course, there are tons of other nutrients in the carrots as well including fiber, high levels of antioxidants, Vitamin K, and Vitamin C.
