What can you do with a can of pop and a bottle of ketchup? Make supper of course! (Wait, that wasn’t the answer you were looking for?)
Although it involves a seemingly strange combination of ingredients, my recipe for four ingredient Crock Pot Cola Chicken is absolutely delicious! I had my first taste of this easy meal at a recipe club meeting some years ago. It can simmer for a large part of the day and makes your house smell of comfort food!
Crock Pot Cola Chicken
Serves 5-6
Ingredients:
1 whole chicken (1 1/2-2 lbs) or chicken breast
1 cup ketchup
1 large onion, thinly sliced
1 cup cola
Directions:
Salt and pepper chicken to taste
Put chicken in crock pot
Add onions
Add cola and ketchup
Cook on low 6-8 hours, checking to make sure chicken does not get too dry.
Shred cooked chicken as desired using 2 forks.
Our favorite way to serve it is on buns with a salad, chips and a pickle, but you could also put it over corn chips if you’d prefer.
