There are some days when all I have time for is a peanut butter sandwich, but all I really want is some decadence. I’ve talked about it in the Gluten Free Community before, but I have to share this new twist on an old sandwich here. Chocolate and peanut butter top the charts of sweet comfort eating in my books, and since you can’t really count Reese’s as lunch, I turn to these bad boys. If you are looking to try something new, look no further:

Grilled Peanut Butter Sandwiches
You can really fill them with whatever you want to, but the ingredients for these in particular are simple:
-Bread (Udi’s, of course! Any kind will work)
-Butter
-Peanut Butter
-Nutella
-Real Maple Syrup
Make your peanut butter & nutella (or PBJ, PB & banana, PB & choc chip…) sandwich. The sky’s the limit!

Butter the outsides of the sandwich, then throw them in a heated skillet to grill. Brown, flip, brown the other side.
The insides should turn gooey and irresistible.
As if that weren’t enough, you can take this up a notch on the indulgence meter by topping with a smidgen more butter and drizzling (or drowning, depending on how your day has gone) with syrup.

Seriously. Amazing. Go cook some up, then while you are blissed out on chocolate goodness, see where your creative juices take you. I’d love to see what you come up with, and so would Udi’s (who knows, your recipe could be the winner)!
I love combining new flavors and gluten free ingredients, and this delicious recipe was a yummy discovery. Now I’m curious to know, what do you enjoy most about trying something new?
