This year, my newest adventure is canning chokecherry shrub. It’s a vinegar syrup that you add to water. This is an old recipe that people made before pop came along, and it tastes great!
How to Use Chokecherries
-Three cups chokecherries, crushed in glass bowl
-One cup white vinegar
-One cup water
Make sure the cherries are covered. Let them sit for 24 hours, stirring once in awhile. Then, put the whole mixture in a saucepan and bring to a boil for 5 minutes. Strain, but do not squeeze.
Add a cup of sugar or sweetener for every cup of juice. Bring to another boil for two minutes. Bottle it, and place it in the fridge for up to 6 months or can via water bath for 10 minutes. Serve by putting 2-4 tbsp into a glass of water, club soda, or sparkling water.
I was a bit hesitant to make it at first…but this will be on my to do each year now! It predates soda pop and sport drinks, and I can make it right in my own kitchen.
