My mission is to save money on food and waste no or little food if I can help it. This past week, I spent a very little amount of money and we ended up with lots and lots of food! Our family of 4 made 4 meals out of about a 2.5 lb beef roast and veggies. Here’s how:
Meal #1 Crock Pot Beef Roast with potatoes, carrots, and onions.
I placed the beef roast and onions in the Crock Pot frozen for about 8 hours low heat. After it did some cooking 4 hours I threw in the potatoes and then after a few more threw in threw in the carrots. I seasoned the roast with Montreal Steak, a McCormick Grill Mates seasoning.
Meal #2 BBQ Beef, sweet potato fries and salad.
I warmed some shredded beef on the stove and poured in some BBQ sauce. I bought some buns from the grocery store bakery on sale. Coupled with the sweet potato fries, it was a tasty bit!
Meal #3 Chicken and Beef Enchiladas.
We had some extra chicken left over from another meal so I made this enchilada recipe that I found from All Recipes.com. It was super tasty!
Meal #4 Beef Broth and Veggie Soup
Leftovers are always wonderful to make into a yummy soup. I saved the beef broth from when the roast was cooking and threw all my leftovers into a pot. It’s always yummy to add garlic and some tasty seasonings.
All these meals were super tasty, and we even had leftovers for lunches. So, I guess we actually got more than four meals out of this tasty roast.
