We’ve been trying to eat healthier around here, and things like cookies just don’t fit our new lifestyle very well. So, I’ve been on the lookout for healthy alternatives for snacks. Kashi makes a snack cookie that’s chewy and yummy, but quite expensive and made with not-quite-healthy ingredients. I wanted to come up with something that would be slightly sweet and absolutely nutritious.
Here’s the recipe I came up with. They were so well loved that I almost didn’t get any pictures to share with you!! The great thing about these cookies is you could take them to a party and no one would know they’re healthy, made with whole wheat flour and contain zero sugar. They are so fluffy and moist!
Erica’s Healthy Oatmeal Raisin Snack Cookies
Mix the wet ingredients:
1/4 c butter
1/3 c apple sauce
1/3 c pureed pumpkin
1/3 honey
2 T molasses
1 egg
1 t vanilla
Add the dry ingredients and mix well.
3/4 c whole wheat flour
1/2 c quick oats
2 T wheat germ
1/2 t baking soda
1/4 t salt
1/2 t cinnamon
Add and stir gently:
1/2 c raisins
1/2 chopped nuts
Drop by large spoonfuls onto a greased cookie sheet. Bake at 325 degrees for 10-12 minutes. Cookies should be medium brown on the bottom, and just barely firm. Makes approximately 15 large cookies. The cookies will be soft and cake-like and very moist. They are fantastic hot and, to my surprise, just as good hours after they’ve cooled.
Optional Goodies:
To make the cookies chewier you could chop some dried fruit, use more oats and less flour, and add some flax seeds. I plan to play with the recipe a lot to make some fun variations!
The pumpkin and applesauce make for a very moist cookie, but there isn’t enough of either in the recipe to really taste. They’re a classic oatmeal and cinnamon cookie with raisins and nuts. Yum!
Those sound DELICIOUS. Wonder if I could sub Gluten Free baking mix for the flour.

I made these again last night. Left out the pumpkin and cinnamon and added shredded unsweetened coconut, chopped pecans, raisins, and dark chocolate chips. Then I added a few more oats. They turned out sooooo good and chewy too!
