I love fall and everything about it, but especially the desserts! But fall is also so busy with preparing kids’ costumes, decorating the porch for Halloween, and assembling our no-candy treats for the neighbors – not to mention sports and school and all. the. soccer. Who has time for baking tons of desserts?
So I was thrilled when I found this no-bake pumpkin cheesecake dessert. Because pumpkins. And cheesecake. And no-bake. Our Oklahoma Autumn weather is usually warm so I still tend to avoid too much oven time. For all these reasons, this recipe is a winner. It’s perfect for a fall party, family gathering, or just because.
Ingredients:
- 1 8oz pkg. of Cream Cheese
- ½ of a 15oz can of Pumpkin Puree
- 3 TBS Sweetened Condensed Milk
- 2 C. Whipped Topping
- ½ tsp. Cinnamon
- Lady Fingers
- Whipped Cream (optional – but is it really optional? I think not!)
With this recipe, you can make different amounts of desserts! You can make one big parfait, or a few individual glasses. The amount you use will determine how many desserts you end up with.
Directions:
Using an electric hand mixer or stand mixer, beat cream cheese until smooth. Add in the sweetened condensed milk, pumpkin puree and cinnamon until well combined. Add whipped topping until incorporated.
Using a glass with a wider top, lay a few lady fingers around the glass. Pipe pumpkin mixture with a pastry bag, or scoop in with a spoon. Top with whipped cream, cinnamon, and even a few more lady fingers.
Tada! It really is *that* simple.
