Cobbler is a time honored comfort food, and it’s very easy to make. I like using my stand mixer to make it extra simple and to cut back on clean up. The sugar and fruit juice glaze make the topping especially delicious. Enjoy the video, and come bake along with me! 1 can of sliced peaches, drained (reserve liquid)
1 can of sliced pears, drained (reserve liquid)
4 tbsp (1/2 stick) unsalted butter, softened
1 c sugar, divided
1 c all-purpose flour
1 1/2 tsp baking powder
1/2 teaspoon salt
3/4 c evaporated milk
1 tbsp cornstarch
1/2 tsp nutmeg
1/2 tsp cinnamon
1/2 c syrup from canned peaches
1/2 c syrup from canned pears

Preheat oven to 350 F.
Spread the drained fruit in the bottom of a 9 x 9 inch greased or sprayed baking dish. Don’t forget to reserve the liquid from the cans.
Cream together butter and 1/4 cup of the sugar in your mixer. You’re looking for a light, fluffy consistency.
Set the mixer to low and slowly add flour, baking powder, salt and evaporated milk. Turn the mixer up to medium, and mix until well combined.
Spread the batter over the fruit with a spoon.
Now, whisk together the remaining ingredients: 3/4 cup of sugar, cornstarch, nutmeg, and cinnamon. Sprinkle the sugar mixture over the batter on the fruit.
Combine the peach and pear juice in a glass measuring cup. Bring to a boil in the microwave and then pour over the sugar mixture in the baking pan.
Bake in a preheated 350 degree oven 55 to 60 minutes. Serve with topping of your choice.
