This recipe was sent to me by ShalimarPerfume, so I thought I would give it a try. This makes a big cornbread about 4 inches high. Leftovers tend to be dry, but I use them up in stuffing and homemade shake n bake. So make a batch now, and have some ready for stuffing on Thursday!
Ingredients
2/3 cup butter or margarine, softened
1 cup sugar
3 eggs
1 2/3 cups milk
2 1/2 cups all purpose flour
1 cup cornmeal
4 1/2 teaspoons baking powder
1 teaspoon salt
Directions
1. Cream butter and sugar in mixer
2. Combine eggs and milk in a bowl
3. Combine flour, cornmeal, baking powder and salt in another bowl
4. Gradually alternate and add ingredients to creamed butter and sugar in mixer, mixing on low setting
5. Pour in 13 x 9 dusted baking pan and bake at 400F for 22-25 min
