We’ve made Kefir from water or milk, then turned it into strawberry cherry ice cream…but what if you are looking for a good, old fashioned vanilla ice cream? Allergies, health, or generally wanting to avoid heavy ice cream can make summertime challenging if the craving hits. Try this classic vanilla ice cream made from Kefir, and see if it hits the spot.
Yield: 6 cups
Ingredients
2 cups Kefir
2/3 cup sugar
1 cup coconut cream (Canned milk, higher the fat content the better)
2 teaspoons vanilla extract
Instructions
1. In a 4-cup measuring cup (or medium bowl) stir together the kefir and sugar, until sugar is dissolved.
2. Stir in the cream and vanilla. Pour mixture* into your ice cream maker bowl and churn until thick and creamy!
*If mixture is too thick add more coconut cream or milk
Enjoy fresh as a “soft serve” consistency, or freeze for later.
