When you deal with food allergies or are simply looking to make better eating choices, summertime can be difficult when ice cream and frozen treats abound. Not to worry, though, once you have some homemade Kefir on hand. Blended with fresh cherries and strawberries that can’t really be matched any other time of the year, you will hardly miss what the musical trucks or parlors have to offer.
Strawberry Cherry Kefir Ice Cream
Yield: 6 cups
Ingredients:
2 cups milk Kefir
2/3 cup sugar
1 cup coconut cream (canned cream/milk, higher the fat content the better)
1 cup of pureed strawberries and cherries — if you want it to be chunky, you can leave chunks of fruit in the finished product.
Instructions:
1. In a 8-cup measuring cup (or medium bowl) stir together the Kefir and sugar until sugar is dissolved.
2. Stir in the cream and pureed berries. Pour mixture* into your ice cream maker bowl and churn until thick and creamy!
*If your ice cream is too thick, you can add coconut milk
Enjoy fresh as a “soft serve” consistency, or freeze for later.
