You know how busy I’ve been lately. So at this point, any recipe that will keep my family fed and keep me from spending too many hours in the kitchen, is a huge winner for me.
Hellmann’s Chicken Change Up had a great selection of recipes to choose from in this week’s Time-Saving challenge. I chose an Italian-inspired chicken dinner because, you know, that’s how I roll.
Parmesan Crusted Chicken with Hellmann’s Chicken Change Up
1/2 Cup Hellmann’s or Best Foods Real Mayonnaise
1/4 Cup grated Parmesan cheese
4 boneless, skinless chicken breast halves
4 tsp. Italian seasoned dry bread crumbs
1. Preheat oven to 425 degrees
2. Combine Hellmann’s or Best Foods Real Mayonnaise with cheese in medium bowl. Arrange chicken on baking sheet. Evenly top with mayonnaise mixture, then sprinkle with bread crumbs.
3. Bake 20 minutes or until chicken is thoroughly cooked.
The given prep time was 10 minutes, and cook time only 20 minutes. I found that I was able to put this dish together in under 10 minutes.
I also coated both sides of the chicken breast with the Hellmann’s Mayonnaise (I actually just dipped it into the bowl). I also sprinkled an extra 2 tsp. of bread crumbs into the baking dish before I lay down the chicken breasts so they are coated on all sides.
While the chicken cooked in the oven, I made a broccoli rice side-dish and had the whole meal finished in less than 30 minutes. Not bad for a delicious, moist chicken dinner and healthy side dish to go along with it!

Thanks! It turned out really delicious. I’m trying to think of how I’d change it up when starting with a whole chicken. I’ll have to learn how to debone it before I cook it I think.
