The leaves are turning beautiful colors, the air is crisp, the kids are back in school – it’s time for a fresh start – time to get organized in the menu planning department! My biggest problem is knowing what to make! Since I’m not the most fabulous cook and the hubby and I both work I usually go for a frozen or to-go option! 🙁

I am SO bad at menu planning! Part of the problem is that our family is gluten and corn free which definitely makes life trickier for me!

Biggest challenge? Making meals that everyone can eat. Hubby can’t eat spicy foods, youngest son has sensory issues with foods.

My biggest challenge is trying to decide what to make with my 10 month old daughter, my husband, and myself, while dealing with my food allergies. I’m allergic to seafood, but I know I need to start preparing it for them, since it’s so healthy.

I am truly meal-challenged. I can follow recipes well and don’t mind cooking…BUT I have a family that is huge or tiny depending on the day! I have 4 adult kids that all cruise in or out (even if they don’t live here, LOL).
Also, while my daughter’s husband is in Afghanistan, she and my two baby grand-daughters are staying with us.
My youngest is 11, so she, me, and my husband are always in the same spot for dinner. So there’s anywhere from 3-8 people eating dinner every night at our home!
I never know how many and it’s very hard to please everyone, so I’m extremely discouraged with meals at this point.

My biggest struggle is taming the chaos! Our children range in age from 18 to 4, my husband’s elderly father lives with us, we homeschool some of our children, others attend classes outside of the home. Everyone has different schedules, yet my dfil expects dinner on the table nightly at 6 p.m. on the dot. Taming the chaos, remaining frugal and finding meals that all will eat combine into my biggest challenge! 🙂
