I’ve been looking for a good eggplant recipe for awhile – I mean eggplant parmesan is fabulous, but it’s a lot of work for me to make an involved dish — and you can only do Italian dishes three or four times a week before the rest of your family starts to complain. 😉 That’s why I was thrilled to see this recipe submitted for the Eating Garden Fresh series.
