Have you ever had a whole wheat biscuit that just didn’t measure up to the rich and flaky biscuits your grandma used to make? Me too. In fact, I’ve been baking with whole wheat flour for about 22 years, and biscuits have always frustrated me. I’ve come across a few recipes that were passable, but not fabulous. This recipe puts them all to shame!
I started with a really old cookbook and decided to substitute about half the ingredients, so I think we can say I’ve got a brand new recipe!
Erica’s Favorite Whole Wheat Biscuits
Preheat oven to 450°
Combine and mix:
2 cups whole wheat flour (I use 100% whole white or golden wheat that isn’t too coarse)
4 t. baking powder
1/2 t cream of tarter
1/2 t salt
Cut in:
1/4 c butter
1/4 c coconut oil
Gently mix in:
3/4 c plain yogurt
2 T milk
2 t honey
Pat out on floured surface and cut out. Place on greased baking sheet and bake for 10-12 minutes or until golden brown.
Makes about 12 biscuits.
What a great recipe – yogurt would add such a lovely texture and flavour to biscuits. They look mouthwatering in the pictures 🙂
