The holidays are winding down, and with them goes the onslaught of stuffing and dinner rolls, pastries and pies that plague the gluten-free eater. Still, the winter lies ahead, and who doesn’t love to snuggle by the fire with a delicious dessert? In fact, I don’t think there is a bad time of year for desserts.
Thankfully, companies like Udi’s and Bob’s Red Mill are taking the guesswork out of gluten free baking, Here are a few simple and delicious desserts that are safe for the gluten-free and delicious for everyone.
Cake Pops With Udi’s Double Chocolate Muffins
The Udi’s blog covered these cake pops awhile back and I haven’t been able to get them out of my head since! Try their recipe, or make it your own. Crumble the muffins up and add any liquid to make a dough that you can roll into balls and freeze. Once frozen, dip them into melted chocolate. You might even experiment by rolling them in crushed candies or nuts. The sky’s the limit!
Gluten-Free Cake Batter Cookies
Convenience meets decadence with these 30 minute cookies. Bob’s Red Mill has relatively affordable chocolate cake batter that mixes up quickly and easily into gluten free chocolate chocolate chip cookies. Enjoy with a glass of milk or a mug of hot chocolate. If you can eat just one, you’ve got me beaten!
Pie Crust With Gluten Free Cookies
Have some extra cookies laying around? Or maybe you just want to make a quick pie crust without messing with a flour blend. Either way, try this pie crust made by smashing cookies, mixing with melted butter and pressing them into a pie pan. Continue on with the recipe. I’m envisioning a cheesecake on a chocolate cookie crust, or an apple pie with a snickerdoodle crust. Yum! Leftover cookies and overripe fruit never looked so good.
