Saturdays are for pancakes or waffles or biscuits or french toast. Everyone wakes up slowly, the rush of the work and school week is passed, and we make a big breakfast that doesn’t adhere to any timers or schedules.
…Evidently, weekend breakfasts don’t adhere so tightly to nutritional standards, either! Laden with breads and doughs and starch and sugar, we really let our hair down when it comes to a lazy morning’s breakfast.
More and more, people are eliminating gluten from their diets in an effort to regain health. Whether it is for weight loss, celiac disease, an allergy or simply a way to feel better, countless families have bid farewell to gluten.
Fortunately, thanks to companies like Udi’s, gluten-free does not have to mean bread-free or even decadence-free. This past Saturday, I took one of the more grounded breakfast options – french toast, which has some built-in protein in the eggs – and made a gluten free version with a twist.
Gluten Free Eggnog French Toast
I followed a pretty standard formula for french toast- 2 eggs, some cinnamon and nutmeg, and about 1/2 cup of milk. Instead of milk, though, I used eggnog. If you are dairy free, Silk Nog is a yummy alternative. Mix that up, then dip your Udi’s toast in (be sure both sides are coated well!) and cook on a skillet or griddle, flipping to ensure it browns on both sides.
A tip about gluten free bread- store it in your freezer, then pull it out to thaw a few minutes before you need it. I was a bit impatient, so I popped mine in the toaster on low just to get it thawed out and nice and sturdy.
The result was perfectly textured french toast, even without a glutenous base, with just a hint of eggnog flavoring. If I were really looking for a treat, I might splurge and make some eggnog gravy, too. But this was just enough, with agave nectar drizzled all around.
With such delicious options, it’s no wonder that the gluten free community is growing.
