A house favorite when it comes to meal time is Mac and Cheese. But in our quest for doing more for ourselves and getting away of prepackaged foods when we can, I was glad to find a recipe for cheese sauce I could adapt for home a macaroni and cheese.
This recipe as written makes a sauce that could be used for potato topping, on pasta, drizzled over broccoli, other veggies or chips, and with a little more cheese add in, used in a noodle sauce for homemade Mac and Cheese dinner.
4 T butter
3 T fresh-ground flour (whole wheat ok)
2 1/2 Cups milk
2-3 Cups shredded cheese (we like cheddar or Colby jack)
Melt the butter in a pan over medium heat and add the flour, stirring quickly to mix thoroughly.
Add the milk and stir until a thin gravy-type mix is made. Then add in your shredded cheese to desired thickness….less cheese will make a creamier mixture, while more cheese will make a thicker, cheesier mixture.
We used the pinwheel pasta with our homemade cheese sauce to create cheesy tractor tire pasta for the Tractor Themed Birthday Party we had for Micah recently.
They were a big hit and gave a healthier, homemade option for this kid-friendly lunch or dinner recipe.
