How to Make Kefir
What you need:
- Glass jars
- Plastic or wooden spoons
- plastic strainer
Instructions for Water Kefir
- 1 cup of water
- 1 cup of sugar
Bring to a boil, and stir to dissolve. Let cool to room temp. Use your pinky to feel if it is cooled to room temp.
After putting the cooled water in a glass jar, then add 1/4 cup of grains, then fill the rest of the jar with water. You may choose to add trace minerals, egg shells, or dried fruit at this time. Your kefir process will be all about trial and error, and what I like in my Kefir will not be the same for you.
Let it sit on your counter top, in a cool dark place for 12-72 hours.
**If you let it sit longer than 72 hours in a warm, sunny place you may get a sour, vinegar-like smell. I would just toss the Kefir water over your plants and start over.**
Instructions for Milk Kefir
Milk kefir is a lot simpler — just put all of your grains in milk (almond, coconut, whole/low/fat free, raw, goat, cow. whichever you choose). Let sit in a a cool dark place for 12-24 hours. The longer you let it ferment, the more pungent and sour it will get. Your palate will determine how long you let it sit.

This is really cool! I only have milk grains and have converted them into juice grains in the past. I never knew the different things you could do with water grains! So interesting! Will definitely share with my kefir friends!
